The mild caraway spirit from the Krempe Marsh

The town of Krempe is the central municipality of the Krempe Marsh and lies between Glückstadt, Itzehoe and Elmshorn. The smallest town in Holstein, Krempe was first mentioned in records in 1234 and was granted town charter as early as 1239.

Starting in 1535, Krempe was fortified at the behest of the Danish King Christian III. A wide moat was dug, bastions built and four town gates erected. The fortification was the second largest in Holstein after Rendsburg. At the time, the town was enjoying economic prosperity. The products of the fertile marsh were exported to Arkhangelsk, Venice and Lisbon via the Krempau river, which was then still navigable. In 1628, the fortress fell to Wallenstein's troops after several months of siege. The surrendered town commander is said to have held a rat in Wallenstein's face with the following words: This is the last, if we had more of them, we would have held out longer!

In northern Germany, Kümmel or Köm is a traditional schnapps similar to aquavit. It is drunk well chilled or hot in a tea punch. The caraway herb used in this distillate quickens the appetite and promotes digestion.

The Kremper Kümmel is particularly mild without being too sweet. It is produced in small batches following traditional artisanal methods.
